Pot Roasting is slowly cooking meat in a covered pot. This method may be used with less expensive cuts of beef. The meat stays moist and is usually cooked with root vegetables such as potatos and onions.
In addition to the wines mentioned in our food pairing table you might consider a Zinfandel. Or go all out and serve a Barolo from northern Italy.
