Muscadet wine in the laboratory
Muscadet is a simple white wine from the Loire Valley in northwestern France. Better quality Muscadets are fermented sur lie, they age on the dregs of the yeast before bottling. Suggested food pairings include Fish Stew, Oysters, Mussels, and Spinach Salad.
Regular Muscadet and Muscadet de Sèvre et Maine many of which mature on its Lie (dregs) start at about $10-12. For about $10 go for the Domaine de la Quilla Muscadet Sèvre et Maine Sur Lie tasting of apples and melon fruit. Look for the Château du Cléray "Haute Culture" Muscadet Sèvre et Maine Sur Lie, a relatively robust wine with good fruit and acidity that costs about $12. If you feel like spending in the $18 range buy a Pierre Luneau-Papin Muscadet de Sèvre et Maine Sur Lie Le L d'Or tasting of lemon verbena, lime zest, and honeysuckle with a touch of minerals.
