Spaghetti Carbonara calls for the right wine pairing.
Pasta alla carbonara (usually spaghetti, but linguine also works well) is an Italian pasta dish based on eggs, pecorino or parmesan cheese, Italian pork , and black pepper. While the porkis cooked before adding to the sauce, the eggs are cooked from the heat of the pasta. Many people add other ingredients such as cream and mushrooms. American servicemen are said to have brought it back to the U.S. from Italy. The best pasta alla carbonara is said to be made with Guanciale, an unsmoked Italian bacon prepared with pig's jowl or cheeks. The second place award goes to Italian pancetta, salted, spiced pork belly. If you have to settle for bacon make sure to use a quality product.
