Fried Chicken is usually breaded prior to frying. It is either deep fried, pan fried, or pressure fried. It might be a good idea to remove some of the breading which absorbs the chicken fat and cooking oil.
In addition to the wines mentioned in our food pairing table you might consider a Zinfandel, Sparkling wine, Chianti, or an Italian Valpolicella.
