Wine production has become quite a scientific art
Sauvignon Blanc is a major variety in Bordeaux and other regions of France, in New Zealand where it is the signature variety, and other countries including the United States.
Sauvignon Blanc is a very food friendly wine and most of our food and wine pairing tables include at least one reference to this often fine grape. Sauvignon Blanc starts at about $8. One good buy is the South African Fairview Coastal Region Sauvignon Blanc at about $13 tasting of citrus and green apple. Cloudy Bay Sauvignon Blanc in the mid-twenties is perhaps the wine that put New Zealand on the map so to speak. It includes ripe passionfruit flavors accented by summer herbs, gooseberry, and stone fruits. This wine has pleasant acidity. I am partial to Sancerre, a French favorite that is said to be the most popular lunch wine but you do have to be careful to avoid disappointment.
