There's nothing like Prime Rib, with the right wine.
As its name indicates, prime rib is a high-quality cut of meat. A full prime rib roast consists of seven ribs, and weighs about 15 pounds. Figure on about two people per rib. A single rib gives you a rib steak, also fine but cooked as a steak rather than as a roast.
In addition to the wines mentioned in our food pairing table you might consider a Merlot from Washington state or a Cabernet Sauvignon. Or be adventurous and go with a Chardonnay. Get a high-quality wine to go with this high-quality meat.
